Lemon Pie - Low or No Sugar

Lemon Pie

From Health Home Cookin Vol. 4

1/2 can frozen apple juice concentrate
3/4 cup water
1/4 cup orange juice
1/3 cup lemon juice (can use 1 to 2 med lemons)
1/3 cup cornstarch
1/4 tsp sea salt
1/2 to 3/4 cup raw sugar to taste OR for sugar free use 1 to 2 tsp of stevia
Just Like Graham Crust (gluten free if needed)

Directions:
1. Blend all together well, adjust lemon juice to taste, in medium saucepan.
2. Cook over medium heat until thick.
3. Pour into pre-baked crust.
4. Chill, about 4 to 6 hours, and serve with whipped topping.
