Simple Vegan CheesecakeFrom Health Home Cookin Vol. 4 An easy, tasty treat. 1/4 cup pineapple juice concentrate Combine all in food processor and blend until smooth (not crust or fruit topping of course). Pour into pre-baked crust. Chill and serve. A bit soft, but nice. *Variation: omit clear jel and add 1/4 cup cornstarch after blending and cook over med heat until thick. Top with fruit topping of your choice and chill. Serves 8 Nutrition (per serving): 70.2 calories; 0.8g total fat; 0mg cholesterol; 27.5mg sodium; 127.5mg potassium; 13.3g carbs; 0.1g fiber; 12.4g sugar; 3.4g protein. Toppings: Cherry Pie Filling, or Raspberry Sauce are axcellent.
