Stroganoff or Stir-Fry

A wonderful recipe from the Vol. 3 Cookbook. (for Video click here - recipe on video has some different ideas too!)

A delicious meal, quick ‘n’ easy too.
1 cup Golden Nuggets (or slivered almonds - I LOVE this with almonds and keeps it gluten free!)
1 to 2 Tbsp vegetable oil
1 med red bell pepper
1 lrg onion, sliced
1 to 2 med carrots, sliced
1 cup green soybeans or chopped zucchini (optional, but very nice)
2 to 3 cups water
2 to 4 Tbsp Bragg’s Aminos
2 Tbsp cornstarch
1 cube Tasty Brown Bouillon (or vegan beef flavour)
6 to 8 cups cooked brown rice or quinoa (rice in picture is Tilda a 'white' rice very high in protein and fiber (as much as brown.)

Chop and start to brown onions and pepper in non-stick skillet with oil. Add Golden Nuggets or almond and brown some more. Add remaining ingredients. Bring to a boil stirring occasionally. Bring to a boil, then simmer 3 to 5 minutes, or until carrots are tender, and serve over warm brown rice or quinoa.

Serves 4
Preparation time: 15 to 20 minutes
Cooking time: 15 minutes (includes sautéing)
Ready in: about 45 minutes
