Delicious with homemade buns or gluten free Almond Crackers.
5 cups tomato juice (one large can or 2 cups tomato sauce plus 3 cups water)
4 cups water
1 cup lentils, washed
1 cup diced carrots
1 cup pearl barley, optional (omit for gluten free)
1 cup chopped celery
1 cup chopped cabbage or spinach, optional
1 cup diced onion (sauteed in olive oil for extra flavor, optional)
1-2 tsp sea salt to taste (or 2-3 Tbsp Beef Flavour)
1/2 med green or red pepper
2 med bay leaves
Bring tomato juice and water to a boil. Add the rest of the ingredients. Bring back to a boil; reduce heat and simmer 1 1/2 hours. Freezes well.
